I was really looking for something interesting to do with radishes when I found the concept of radish baguettes. It’s a French thing – my recipe is an adaptation of a Martha Stewart recipe that involves making a compound radish butter spread over warm baguette halves, then dressing up the crunchy spicy baguettes with fresh arugula. It’s also a beautiful party snack!
- 1 fresh baguette
- 1 bunch of radishes
- 4 TBSP softened salted butter
- 1-2 ounces fresh arugula, chopped
- fresh cracked black pepper
Preheat the oven to 350ºF, then warm the baguette for about 8 minutes. In the meanwhile, grate the radishes with a mandoline on medium grate (or a grater).
Combine the grated radish with the softened butter, stirring to thoroughly combine. Slice the baguette in half, and spread the radish butter over both halves of the warm baguette. Add a little fresh cracked black pepper, then top with the chopped arugula. Serve immediately.
