Radish Butter & Arugula Baguettes

20180519_155644.jpgI was really looking for something interesting to do with radishes when I found the concept of radish baguettes. It’s a French thing – my recipe is an adaptation of a Martha Stewart recipe that involves making a compound radish butter spread over warm baguette halves, then dressing up the crunchy spicy baguettes with fresh arugula. It’s also a beautiful party snack!

  • 1 fresh baguette
  • 1 bunch of radishes
  • 4 TBSP softened salted butter
  • 1-2 ounces fresh arugula, chopped
  • fresh cracked black pepper

Preheat the oven to 350ºF, then warm the baguette for about 8 minutes. In the meanwhile, grate the radishes with a mandoline on medium grate (or a grater). 20180519_153336.jpg

Combine the grated radish with the softened butter, stirring to thoroughly combine. Slice the baguette in half, and spread the radish butter over both halves of the 20180519_154102.jpgwarm baguette. Add a little fresh cracked black pepper, then top with the chopped arugula. Serve immediately.
